The Terra Alta extra virgin olive oil comes mostly from the 'empeltre' olive variety, with a small share of `arbequina´, 'morruda' and `farga.´ It is characterized by being a limpid, transparent oil of a yellowish colour, of light to medium intensity, a bit bitter and spicy, with a certain astringency and with aromatic connotations reminiscent of almond and green walnut. At the beginning of the harvest, towards the month of November, it presents a fruity taste, and, from now on, a sweeter taste.
